Hello dear moms and dads!
I am so happy to share a new, delicious and healthy recipe here in this toddler diet series after a while.I have come up with a recipe loaded with vegetables that can provide your little one a wholesome diet. It also has cheese for protein source and rice noodles can be a healthy alternative for the usual noodle.

Here is the recipe of stir-fried rice noodles, loaded with veggies.
Ingredients :
- Rice noodles – 1 brick
- Carrot – 1
- Potato – 1/2
- Purple Cabbage – 1/4 cup
- Broccoli – 1/4 cup
- Peas – 1/4 cup
- Corn – 1/4 cup
- Soy Sauce – 1 Teaspoon
- Green chili sauce – 1 Tea spoon
- Red chili sauce – 1 Teaspoon
- Ginger and Garlic paste – 2 Teaspoons
- Vinegar – 1 Tea spoon
- Salt – As required
- Cheese – grated – as required
- Oil – 2 Tea spoons
Method :
- Cook the noodles according to the package instructions. Drain excess water and set aside.
- Heat a large,heavy-bottomed pan and add oil.
- Add the veggies one by one and stir well. But it shouldn’t be over cooked and it should be still crispy.
- Add the ginger-garlic paste,Vinegar, soy,green chili and red chili sauces. Mix well. Add required salt.
- Once the veggies turn soft and the sauces have coated them, add the cooked noodles.
- Mix well and finally add grated cheese.

Note :
- Instead of rice noodles, wheat spaghetti can also be used.
- You can add any veggies of your choice.
- Adjust the amount of sauces according to the spice level preferred by the child. You can also add pepper, before adding cheese.

This recipe sounds delicious. It’s a great way to sneak in more vegetables for your toddler. The dish also provides the flexibility of experimenting with different vegetables to accommodate your toddler’s taste. When first making this dish, use spices conservatively until you understand what your toddler can tolerate, especially when it comes to heat level. Additionally, rice noodles are a good option for toddlers with wheat sensitivity.
The cheese is a good source of calcium and protein and the vegetables are a good source of vitamins, minerals, and antioxidants. For added protein, you can choose to cube lean chicken into the recipe. If your toddler isn’t a fan of chicken, there’s tofu which provides a good vegetarian source of protein. Make sure vegetables are cut small enough so your toddler can chew and swallow them easily. Store leftovers for up to three days.
